Defense works as an evasion, the higher the defense the more chance to roll low dmg. That affects both players and monsters.
So if you want to deal more dmg you'll need high bonuses stats for your combat style. And to have more chance to reach max dmg you need accuracy.
Finally if you want to lower the dmg from enemies you'll need defense (so they'll roll lower numbers).
Defense skill increases defense for melee, archery and magic.
